Making food is about people
I will be the first to admit that probably 69.9% of the time, the food I make is about me and whatever chocolate craving I’m having currently! 😛
But when I step back & think about my motivation to make food, it’s often for other people.
Casseroles for church potlucks. Salad or dessert for dinner at friend’s house. Lasagna for a new mother & her family. Industrial amounts of spaghetti for summer camp.
…And the list can go on & on.
Do you agree with me yet? Food is about people.
Food is for friends
When I was in Mexico, I stayed with a sweet family who volunteers at a Christian school during the day & is very involved in the church at night & on the weekends. Their lives are busy busy busy! 😉
No one was starving, but because they were so busy, there were times when they lived on peanut butter & jelly sandwiches. And breakfast was always a struggle.
While I was there, the mother of the family asked if I could take the helm in the kitchen. I said, “Sure!” And, y’all, I have never enjoyed cooking so much! 🙂
It wasn’t that my food was all that great. It wasn’t even the fact that everyone was super complimentary and appreciative (though don’t get me wrong; I certainly enjoyed all those words of affirmation! 😉 )
But to be very honest, the thing that I enjoyed the most about cooking for that family was that it was an opportunity to serve them & to love them.
How making food can be about people
I was able to make sure dinner was ready before it was time to rush around like crazy to get to Bible study or prayer meeting or whatever was scheduled that night.
I was able to provide “to-go” breakfasts to grab on the way out the door to school in the morning.
And I was able to make homemade bread and apple crisp and biscuits & gravy and meatloaf and so many other foods that tickled the fancy of certain individuals in the family. 😉
In short, I felt like I was able to show them:
- how much I loved each one of them
- how much I appreciated their family & wanted to help it run smoothly
- how glad I was to be there & be a part of their lives in that moment.
Yeah, I know… I guess that’s pretty emotional for bread & meatloaf & gravy. But I really did feel like it was a way of expressing my love for my host family.
Because—say it with me—food is about people. 🙂
Egg Free Slow Cooker Meatloaf
And that brings me to this easy-peasy grain free, egg free Slow Cooker Meatloaf.
This slow cooker meatloaf would definitely be for one of the boys in my host family, who went in for an allergy test while I was visiting. He’d been struggling with ongoing digestive problems for a while, and sure enough, his results came back positive. He apparently is allergic to nuts & to eggs.
I guess I’ve met several folks who are allergic to nuts. That didn’t seem such a big deal. There’s always sunflower seed butter instead. 😉
But eggs?? It seems extremely hard to avoid eggs.
Baked goods are out. Suddenly it’s super hard to easily cook up protein. And what do you eat for breakfast??
I have to say, this poor guy got pretty creative with his protein sources. Did you know you can use chia seeds, flax seeds, banana, or pumpkin as a replacement for eggs? I didn’t either. Now I do! 😛
I still think eggs are an unfortunately hard ingredient to replace. But there are ways around it.
For example, this egg free Slow Cooker Meatloaf has all the convenience of cooking up in the slow cooker, but none of the inconvenience of causing allergic reactions! 😉
It is, admittedly, a little crumbly. It might be worth experimenting with egg replacements to see if it can be held together better. If you do experiment, let me know! 😀
But, crumbly or not, it is still quite tasty! Even if you don’t have an egg allergy. 😉
And it’s super fast & easy.
Slow Cooker Meatloaf Recipe
Don’t forget, this healthy Slow Cooker Meatloaf is egg free, gluten free, grain free, sugar free, dairy free, Paleo & Whole30 approved, low carb, and a Trim Healthy Mama (THM) S!
Here’s the recipe:
- 2 Tablespoons oil of your choice
- 2 small onions, diced
- 2 teaspoons salt
- 1 teaspoon oregano
- 1 teaspoon parsley
- ¾ teaspoon pepper
- ½ teaspoon basil
- ¼ teaspoon turmeric
- ¼ teaspoon thyme
- 2 pounds ground beef
- 1 cup almond flour
- Coat a large frying pan using the oil.
- Add the onions & spices and sauté until onions are soft.
- Place beef and almond flour into a small crock pot. Add the onion mixture.
- Using your hands, mix together thoroughly. Then shape into a large ball in the bottom of the crockpot.
- Cook on “high” for 4-6 hours, or until meat is cooked through.
- Top with ketchup, mustard, and/or salsa to serve
